Sift 1–2 tsp of matcha into a bowl, add water at about 70–80 °C (not boiling), and whisk with a bamboo whisk (chasen) until frothy. For a latte, just top up with steamed milk.

Sealed, cool, dark, and dry — ideally in the fridge, away from strong smells. Use opened matcha within a few weeks while it's fresh.

Ceremonial grade is from the youngest leaves, tastes finer, and is drunk on its own. Culinary grade is bolder and suits lattes, baking, and recipes where it blends with other flavours.
